cosa vi serve
carne macinata mista manzo e maiale circa 800g, speck tagliato a cubetti, quattro uova, grana grattugiato, pistacchi sgusciati, pinoli, pan grattato, sale, pepe, noce moscata, 4 fette di vitello, brodo di verdure, salvia, rosmarino, filo per arrosti, batticarne.
introduzione
una volta all’anno mi viene una voglia irrefrenabile di polpettone. ognuno ha la sua ricetta, per molte mamme e nonne è un bel modo per svuotare il frigo, c’è chi ci mette dentro formaggio fuso, spinaci, frittate, qualsiasi cosa. il polpettone della comare ha una lunga tradizione, più o meno lo faccio sempre allo stesso modo e secondo me è proprio buono.
preparazione
in una ciotola bella grande mettete la carne macinata, lo speck a cubetti, i pistacchi e i pinoli, tanto grana grattugiato, quattro uova, un po’ di sale, pepe, noce moscata in polvere e cominciate ad amalgamare il tutto impastando con le mani. aggiungete un po’ alla volta il pan grattato finché non otterrete un impasto solido abbastanza. stendete le fettine di vitello su un tagliere e battetele con un batticarne, col fondo piatto di un bicchiere, con un martello di gomma da muratori, quello che vi pare, fate in modo che diventino belle sottili e poi usatele per avvolgere completamente il vostro polpettone. legate con uno spago. non è facilissimo ma nemmeno ci vuole una laurea, trovate di sicuro dei tutorial su youtube, fate meglio che potete. poi prendete una pentola grande abbastanza, olio, rosmarino, salvia, e a olio caldo fate rosolare subito per bene su ogni lato il vostro polpettone girandolo con attenzione per non romperlo, e poi fatelo cuocere senza più spostarlo a fiamma bassissima con il coperchio per un paio d’ore aggiungendo poco alla volta una mestolata di brodo (il brodo deve stare sul fondo e basta, non dovete fare un bollito) e bagnando di tanto in tanto la parte superiore del polpettone. a cottura ultimata servitelo a fette col suo sugo di cottura. sta molto bene con delle patate spadellate o arrosto di contorno.

preparation
in a nice big bowl put the ground meat, the diced speck, the pistachios and the pine nuts, lots of grated grana, four eggs ,a bit of salt, pepper, nutmeg powder and start mixing it all together by hands. add the breadcrumbs a little at a time until you get a firm enough mixture. lay out the veal slices and pound them with a meat mallet, with the flat bottom of a glass, with a rubber mallet, whatever you like, make sure they become nice and thin and then use them to wrap your meatloaf completely. tie with a string. it is not super easy but you do not need a degree either, you will surely find some tutorials on youtube, do the best you can. then take a big enough pot, oil, rosemary, sage, and in the hot oil brown your meatloaf well on every side right away turning it carefully so it does not break, and then let it cook without moving it anymore on a very low heat with the lid on for a couple of hours adding a ladle of broth a little at a time (the broth must just stay on the bottom, you do not want to boil it) and basting the top of the meatloaf from time to time. once cooked serve it in slices pouring its cooking juices over it. it goes very well with pan-fried or roasted potatoes on the side.
